Hygiene is one of the biggest trust signals a street-food business has — customers often decide in seconds whether a stall looks clean enough to buy from.

1. Separate raw and ready-to-eat zones. Even in a small footprint, keep raw prep away from serving areas to avoid cross-contamination.

2. Make handwashing visible and easy. A dedicated handwash point that's actually easy to reach gets used far more consistently than one that's awkward to access.

3. Clean surfaces on a schedule, not just when they look dirty. A simple checklist at open, mid-shift and close catches build-up before it's visible.

4. Store ingredients at the right temperature. Cold storage that's sized correctly for your menu — not overstuffed — keeps temperatures stable.

5. Keep waste contained and away from prep. A covered bin with a tight-fitting lid, emptied on a schedule, prevents pests and odour building up during service.
